CHICKEN TIKKA MASALA CALZONE

NEW RESTAURANT FAKEOUT RECIPE & MEAL KIT

Bonjour les aimes! I want to show how easy it is to make my Chicken Tikka Masala Calzone. There is no need to ever order this at a restaurant. You can make it in the comfort of your own kitchen and that is why I call it a fakeout. I used @desigalli Chicken Tikka Masala as our filling but can be made with any 16oz of curry leftovers you have. The calzone base is also vegetarian, everyone who does not have a gluten allergy can eat it!  

This recipe serves 4-6 and heats up well for leftovers. 

Ingredients for Calzone Base:
-3 cups Gold Medal™ All Purpose Flour, 1 tbsp all purpose flour divided
-1 tbsp Colavita™ Olive Oil, 2 tsp olive oil divided, to coat pan
-2 tsp Blossom Hill Clover Honey Bear
-2 tsp DG Pantry Yeast
-1 tsp salt
-1 cup warm water

Stuffing:
-2 cups of curry leftovers
-garnish of choice (I used red onions)

Directions:
0.in a large bowl combine water, yeast, honey. Stir until dissolved. Let rest for 15 mins until it is foamy on top. If this does not happen after 20 mins please try again, your dough will not rise without this step.
2. Slowly mix in the salt, all-purpose flour and 1 tbsp olive oil. Mix with a large spoon until a dough combines.
3. Using your hands, knead together for a few minutes and form a ball. Drizzle ball with 2 tsp of olive oil and cover and let rise for 2 hours. 
4. After 2 hours your dough should have risen. Knead again and let rise again for another hour covered.
5. Preheat oven to 450 F.
6. Sprinkle 1 tbsp on all purpose flour on a clean work station.
7. Roll out dough to form a circle shape. About 14 inches wide. 
8.Add your stuffing in a row in the center.
9.Garnish as you wish 
10.Using a sharp knife or pastry cutter make 1 inch slits perpendicular to your stuffing while leaving a 1 inch gap from stuffing.
11.Then criss cross the loose layers of dough to form a braid. Stuff in the dough of top and bottom of calzone.
12.Bake for 15 to 20 mins until golden brown. Remove from oven and let cool 10 minutes before cutting into slices

PIZZA FAKE OUT RECIPE

Prep Ingredients:


Dough:
-3 cups Gold Medal™ All Purpose Flour, 1 tbsp all purpose flour divided
-1 tbsp Colavita™ Olive Oil, 2 tsp olive oil divided, also to coat pan
-2 tsp Blossom Hill Clover Honey Bear
-2 tsp DG Pantry Yeast
-1 tsp salt
-1 cup warm water

Pizza Sauce:
-1 can 28oz tomato puree
-1 tbsp Colavita™ Olive Oil
-2 minced garlic cloves
-2 tbsp DG Pantry Chili Flakes
-2 tsp DG Pantry Black Pepper
-1 tbsp dried oregano
-1 tsp salt
-1 tsp DG Pantry Sugar

Our Toppings: can be changed:
-1 1/2 cup shredded jalapeño pepper jack
-1/2 sliced bell pepper
-6 sliced mushrooms
-1/4 Sliced Red Onion
-12 sliced kalamata olives
-1 tsp dried oregano
-1 tsp DP Pantry Chili Flakes

Directions:
1. In a large bowl combine water, yeast, honey. Stir until dissolved. Let rest for 15 mins until it is foamy on top. If this does not happen after 20 mins please try step 1 again, your dough will not rise without this step.
2. Slowly mix in the salt, all-purpose flour and 1 tbsp olive oil. Mix with a large spoon until a dough combines.
3. Using your hands, knead together for a few minutes and form a ball. Drizzle ball with 2 tsp of olive oil and cover and let rise for 2 hours. You can make pizza sauce recipe below and prep toppings while dough is rising.
4. After 2 hours your dough should have risen. Knead again and let rise again for another hour covered.
5. Preheat oven to 500 F.
6. Sprinkle 1 tbsp on all purpose flour on a clean work station.
7. Roll out dough to form the shape of your sheet pan. It can be a rectangle or a circle.
8. Grease your sheet pan and slowly place your rolled out pizza dough.
9. Spread 3/4 cup of pizza sauce onto pizza dough.
10. Add your favorite grated cheese.
11. Add your favorite toppings.
12. Sprinkle oregano and chili flakes.
13. Bake for 10 to 12 mins until edge is brown and cheese is melted. Remove from oven and let cool 10 minutes before cutting into slices.

Directions for pizza sauce:
1. Heat medium sauce pan with oil olive.
2. Add minced garlic and chili flakes and caramelize.
3. Add tomato puree, salt, black pepper, oregano and sugar.
4. Bring to a simmer for 5 minutes to blend spices and sauce is ready.
